Mark your calendars for July 7th because it's World Chocolate Day, an occasion that allows chocolate lovers enjoy their favourite treat without guilt!

This day is a celebration of all things chocolate, from indulging in a steaming cup of hot chocolate or relishing a velvety chocolate cake to delighting in chocolate-covered brownies and the ever-popular chocolate bar.

Derived from the seeds of the tropical Theobroma cacao tree, chocolate has a rich history dating back at least three millennia. The tree thrives in regions like Mexico, Central America, and Northern South America. The earliest evidence of cacao seed usage dates to 1100 BC. Initially, these seeds possess a potent, bitter taste, necessitating fermentation to develop their characteristic flavour. Following fermentation, the beans are meticulously dried, cleaned, and roasted. Subsequently, the shells are discarded, leaving behind cacao nibs. These nibs are then ground into cocoa mass, the raw form of pure chocolate.

Typically, cocoa mass is melted and shaped with or without additional ingredients, leading to what is known as chocolate liquor. The liquor undergoes further processing, resulting in two components: cocoa solids and cocoa butter.

Chocolate holds a special place in the hearts of many, with nine out of ten individuals professing their love for it, around 1 billion people indulge in chocolate daily. Beyond its delectable taste, chocolate boasts a few health benefits. It stimulates the production of serotonin and dopamine, neurotransmitters that elevate mood. Dark chocolate, packed with antioxidants, aids in improving blood flow, reducing blood pressure, and lowering the risk of heart disease. So, go ahead and treat yourself on World Chocolate Day!
