One of our most cherished recipes from our Access Care team is that of a Classic Vanilla Birthday Cake. This recipe was kindly shared by a home care client with one of our live-in carers many years ago. 

This timeless cake is delightfully light, with a fluffy texture and rich, buttery vanilla flavour. It's the perfect centrepiece for any birthday celebration and is sure to bring smiles and delight to everyone that tries it!


  • Cake:

  • 2 ½ cups self raising flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, room temperature

  • 1 ½ cups granulated sugar

  • 4 large eggs

  • 1 cup whole milk

  • 2 tsp vanilla extract

  • Buttercream Frosting:

  • 1 cup unsalted butter, room temperature

  • 4 cups icing sugar

  • 2 tbsp double cream

  • 2 tsp vanilla extract

  • Food colouring (optional)


  1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).

  • Grease and flour two 9-inch round cake pans, or line them with parchment paper.

  1. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  1. Cream Butter and Sugar:

  • In a large bowl, using an electric mixer, beat the butter until creamy.

  • Gradually add the sugar, continuing to beat until the mixture is light and fluffy.

  1. Add Eggs and Vanilla:

  • Add the eggs one at a time, beating well after each addition.

  • Mix in the vanilla extract.

  1. Combine Wet and Dry Ingredients:

  • Alternately add the flour mixture and the milk to the butter mixture, starting and ending with the flour mixture. Beat until just combined.

  1. Bake the Cake:

  • Divide the batter evenly between the prepared pans.

  • Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  • Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

  1. Prepare the Buttercream Frosting:

  • In a large bowl, beat the butter until smooth.

  • Gradually add the powdered sugar, one cup at a time, beating on low speed until combined.

  • Add the heavy cream and vanilla extract, beating on high speed for about 3 minutes until light and fluffy.

  • Add a few drops of food coloring if desired and beat until the color is even.

  1. Assemble the Cake:

  • Place one cake layer on a serving plate.

  • Spread a layer of buttercream frosting on top.

  • Place the second cake layer on top and apply a thin layer of frosting (crumb coat) around the entire cake. Chill for 30 minutes.

  • Apply the remaining frosting and smooth it out with an offset spatula.

  • Decorate the cake with additional sprinkles, fruits, or other decorations as desired.
