What better excuse to put on a cosy afternoon tea than a special celebration? Prepare a delicious spread with sandwiches, scones, and here is a favourite recipe of our’s for Eton Mess:

Eton Mess Recipe


  • 4 meringue nests

  • 300ml double cream

  • 400g strawberries, hulled and chopped

  • 2 tbsp icing sugar

  • 1 tsp vanilla extract


  1. Whip the double cream until soft peaks form. Add the icing sugar and vanilla extract.

  2. Crush the meringue nests into bite-sized pieces and gently fold them into the whipped cream.

  3. Layer the cream mixture with chopped strawberries in serving glasses. Serve immediately.
