Eton Mess Recipe - The Perfect Summer Dessert!

We're feeling all summery here at Access Care HQ in Hampshire - home carers and office staff alike! So we wanted to share with you a recipe for one of our favourite summer desserts - Eton Mess! Fresh strawberries and cream, with the crunch of a light meringue.... Yum! Ask your live-in carer to help you make this dessert and enjoy together on a bright summer evening. This Eton Mess recipe takes just 10 minutes to make!

Did you know: Eton Mess gets its name as it is the dessert traditionally served at Eton Colleges prize giving picnic on June 4th!

To make it is really easy you can use ready made meringues. Why not up your 5 a day by adding raspberries, blackberries or blue berries. You can also try something different by adding a drizzle of port, kirsch or Cointreau.

Ingredients

  • 6 readymade meringues

  • 570ml double cream (or use Greek yogurt for a healthier version)

  • 450g strawberries, washed and hulled

  • 75ml port, Kirsch or Cointreau (optional)

Method

  1. Cut the strawberries in half or into thick slices if they are big. Place in a bowl with the port, kirsch or Cointreau if using. Cover and chill for 2-3 hrs.

  2. Whip the cream until it forms soft peaks, then fold in the berries and juices

  3. Crush the meringues and fold into the strawberry and cream mixture

  4. Spoon the Eton mess into individual dishes. If you like, you can decorate with extra strawberries.
